It is important to get your commercial kitchen exhaust system cleaned professionally on a regular basis because the grease buildup becomes a fire hazard. The National Fire Protection Association (NFPA) Standard 96 provides schedules for how often a commercial kitchen needs to be cleaned and degreased in order to mitigate the risks of fire.
